Domaine Ramonet - Chassagne-Montrachet

Domaine Ramonet farms across Chassagne-Montrachet, one of the Côte de Beaune's great white appellations, drawing on the villages' mix of limestone and clay soils that give Chardonnay from here its structure and depth. This is a wine of place first: pure Chardonnay, vinified with the restraint that lets the terroir speak rather than the winemaking.

Expect a taut, mineral core with orchard fruit and a savoury, flinty edge that broadens with air. Serve at cellar temperature alongside turbot, langoustine or a simple roast chicken with butter sauce - dishes that need a white with real backbone.
